The best
Peanut Butter Cookies
you’ll ever, ever taste.

1 c butter
1 c sugar
1 c dark brown sugar
2 eggs, well-beaten
1 cup Real Peanut Butter (refrigerated section of your friendly grocery store)
2 tsp real vanilla
2 c flour
1 tsp soda
½ tsp salt
Cream butter. Add sugars. Mix thoroughly. Add eggs, peanut butter and vanilla. Sift together flour, soda, and salt. Add to creamed mixture. Beat well. Shape into walnut-sized balls. Place on ungreased baking sheet. Flatten with crossed forks into ¼ “ thickness. Bake at 350 degrees until golden brown.

MY CARROT CAKE

CAKE
2 C FLOUR
1 ½ C WHITE SUGAR
½ C DARK BROWN SUGAR
1 TSP SALT
2 TSP BAKING SODA
2 TBSP CINNAMON
1 ½ C COOKING OIL
4 BEATEN EGGS
3 C SHREDDED CARROTS
1 ½ C CHOPPED WALNUTS
HEAT OVEN TO 350. SIFT DRY INGREDIENTS TOGETHER. ADD OIL, EGGS, CARROTS, NUTS. POUR INTO GREASED AND FLOURED PANS. BAKE 65 MINUTES. COOL COMPLETELY. SLICE LAYERS. FROST.
FROSTING
8 OZ CREAM CHEESE
¼ C SOFTENED BUTTER
3 ½ OZ POWDERED SUGAR
2 TSP VANILLA
WALNUTS AND ORANGE SLICES FOR GARNISH.
...THIS CAKE FREEZES VERY WELL.

Teriyaki Chicken Wings
20 lb chicken wings, jointed
4 c soy sauce (lite)
1 c molasses
5 tbsp ground ginger
5 tbsp dry mustard
3 cloves garlic, minced
1 can pineapple juice
Mix in large Ziploc plastic bags to marinate overnight. Bake in single layers on baking sheet at 350 degrees for one hour. Chill wings in container. The secret: Reheat and bake for the second time at 400 degrees for 20 minutes.
Party on.

Marinated Red Onion Relish
Makes about 3 cups
¼ cup red wine vinegar
¼ cup green onions
2 garlic cloves, minced
1 tablespoon sugar
1 teaspoon paprika
1 teaspoon dry mustard
½ teaspoon dried tarragon, crumbled
½ teaspoon dried thyme, crumbled
¼ teaspoon salt
¼ teaspoon freshly ground pepper
1 cup vegetable oil
1 pound red onions, sliced into thin rings
Mix the first 11 ingredients in large non-aluminum bowl. Whisk in oil in a thin stream. Pour into a one-gallon zip-loc plastic bag. Add onions to the bag. Turn bag to mix ingredients.
Marinated Red Onions can be refrigerated up to 7 days before serving
Top turkey with Marinated Red Onion Relish; create a gourmet ground beef burger, turkey burger, or veggie burger; toss on pizza; spoon on sandwiches; and use in salads. Imagine!
